Little Pomona 'Sum of the Parts Act 3' Cider
Still, dry cider.
Inspired by the Spanish solera system, used to produce sherry, Little Pomona started filling barrels with each vintage as it passed and allowing it to mature. Each year they draw off the oldest liquid, replacing it with the next oldest and so on.
A beautiful burnished gold in colour, on the palate it is very dry, with flavours of burnt candied fruits. Some astringency with mild tanins on the finish.
Best enjoyed on its own, but it pairs well with all cheese.
