Due to the diverse flavour-producing bacteria in the milk that’s used, only very small quantities of starter culture are needed. This is added to partially skimmed milk and left to ripen overnight in a room kept at 30C. The cheeses are then ladled by hand from small basins of curd and drain on reed mats.

This is an elegantly subtle Camembert with complex flavours ranging from vegetal, buttered spring greens to more ethereal, ozone, sea-side qualities.

Our standard delivery charge for orders under £50 is £8 to any address in Great Britain on an overnight service. Orders of £50 or more are delivered for free using this service, as are all subscriptions.

Whilst most orders do arrive on the chosen date, we rely on a third party provider and therefore we cannot guarantee delivery dates. Your order may arrive 1 or 2 days either side of your preferred date. This is more likely at very busy times, particularly Christmas.

If you live within 8 miles of our Chelsea shop you may wish to use our local London Delivery service? The cost for this ranges from £6 to £19, depending on distance, and you can choose a delivery as soon as within the next hour or so, to a named one-hour time slot and a date up to 6 months in the future. London deliveries are made in our sturdy shop carrier bags. If you would like your order to be boxed, please leave us a note as you check out.

If you'd like to collect your order, simply choose 'Shop Collection' at the checkout, and a time and date that's convenient for you. We'll send you an email on the collection day to let you know the order is ready to pick up.

As a general rule of thumb, we recommend around 100 grams per person for after dinner, and up to 150 grams if cheese is the focus of the meal.

If you are buying cheese to serve over a couple of days or as part of a buffet, it is advisable to buy a few larger pieces. This will look better and keep better than several smaller bits.

To help visualise weights, a good tip is to consider that a regular supermarket block of butter weighs 250 grams.

How long will my cheese last?

There are a huge array of factors which affect how long cheese will last, but as a general rule we would recommend eating your cheese within 5-10 days of receiving it. Softer cheeses should be eaten the soonest, whilst harder cheeses will generally last the longest.

If you need your cheese to last, buy larger pieces as these tend to keep better and longer. They will also look better on the dinner table, if you are entertaining guests for example. Also, buy it as close to when you want to serve it as possible (although if you are having your cheese delivered, also remember to allow for a few days leeway in case of delivery disruption).
